Sometimes it reaches considerable dimensions and is very similar to the black truffle, the outer surface shows brown pyramidal warts and has an intense aroma. At Taglio it is recognized by the precious black because the gleba is lighter, tending to dark yellow with thin white veins. It grows both in sandy and clayey soils, in deciduous and pine forests. Despite having a medium-low market price, it is widely used by the processing industry and the fresh market as it is the only summer-ripening truffle.
It is advisable to keep it once received in absorbent paper and in the refrigerator. Whenever the paper becomes wet, replace it. Consume within 7-10 days of receipt.
